It is because the red hair gene is recesive. Which means that if two people reproduce and one has red hair and the other has brown hair, the child is much more likely to have brown hair than red hair.

Well all our features are decided by pairs of genes which we inherit from our parents...in a gene pair one gene is dominant and the other is recessive...so the dominant is more likely to show itself....which means that the gene for red colour is mostly recessive to genes of other colours..so you may have inherited the gene for red colour but it will not show its characteristic if a dominant gene is present.
